Traditionally, a glut of unused eggs during Lent would be decorated at Easter

That's how the tradition started, at least in the more orthodox (or strict) branches of Christianity, which didn't eat meat, dairy, or eggs the whole period. By the end, there was more than could be eaten, so decorations ensued.
